Chef Anis Hamlaoui brings over 25 years of international culinary experience to Grand Cayman, combining Mediterranean heritage, French technique, and Caribbean inspiration to create bespoke dining experiences for private clients and special occasions.
I grew up along the southern Mediterranean coast, where food was never just sustenance—it was a way of life. From an early age, I was immersed in the essence of fresh, ingredient-driven cuisine, from the cold pressing of olive oil to the delicate distillation of rose water. I witnessed transformation at its purest: pistachios becoming butter, figs turning into jam, anchovies sun-dried by the sea air, and red mullet brightened with citrus. These early experiences shaped not only my palate but my identity.
When I began my professional journey in Canada, I carried with me a simple philosophy: the palate is deeply connected to memory. This belief has guided my work across every environment—from corporate kitchens and private elite clubs to television and culinary promotions. No matter the setting, my goal has remained the same: to create food that resonates emotionally as much as it satisfies.
My approach is rooted in a respect for ingredients and their origin.
